Easter egg rocky road

Don't waste your leftovers this Easter
Too much chocolate and don't know what to do with it? Make some delicious rocky road!
INGREDIENTS
- 2 cups leftover chocolate Easter eggs (crushed)
- 1 cup mini marshmallows
- 1/2 cup chopped nuts (e.g. almonds or walnuts)
- 1/2 cup shredded coconut
- 1/4 cup butter
- 1 cup digestive biscuits (crushed)
- 1 cup milk chocolate chips
- 1 cup dark chocolate chips
METHOD
- In a large bowl, combine the crushed Easter eggs, mini marshmallows, chopped nuts and shredded coconut. Mix well and set aside.
- In a small saucepan, melt the butter over low heat. Add the milk and dark chocolate chips, stirring constantly until fully melted and smooth.
- Pour the melted chocolate mixture over the Easter egg and marshmallow mixture. Stir until all ingredients are well coated in chocolate.
- Add the crushed digestive biscuits to the mixture and fold gently to combine.
- Line a 9x9 inch baking dish with parchment paper. Pour the mixture into the dish and press down lightly to flatten and spread evenly.
- Place the dish in the fridge and allow the rocky road to set for at least 2 hours, or until firm.
- Once set, remove from the fridge and cut into squares. Serve and enjoy!
