Leftover chocolate egg brownies

Don't waste your chocolate Easter eggs, make something delicious 🍫

Easy to make and great to share (or keep for yourself), this is the perfect holiday recipe to make the most of your leftover chocolate eggs. 

INGREDIENTS

  • 1 cup leftover chocolate eggs (chopped)
  • 1/2 cup unsalted butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 tsp salt

METHOD

  1. Preheat your oven to 180ºC and grease a square baking dish.
  2. In a heatproof bowl, melt the butter and chopped chocolate eggs together in the microwave, stirring every 30 seconds until smooth.
  3. In a separate bowl, whisk together the sugar, eggs and vanilla extract until well combined.
  4. Slowly pour the melted chocolate mixture into the egg mixture, stirring constantly.
  5. Sift in the flour, cocoa powder and salt. Fold into the matter until just combined.
  6. Pour the batter into the prepared baking dish and smooth out the top. 
  7. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the centre comes our with a few moist crumbs.
  8. Allow the brownies to cool completely before slicing into squares and serving.
