Vegan salad with roasted butternut squash

Plant-based, refreshing and filling
INGREDIENTS
- Butternut squash
- 2 garlic cloves
- Olive oil
- Pepper
- Smoked paprika
- Quinoa
- Hummus
- Bag of mixed leaves
METHOD
- Slice butternut squash in half and scoop out seeds
- Chop the butternut squash into pieces- i leave the skin on for bite
- Put the squash pieces on a baking tray, drizzle with olive oil and season with salt, pepper and smoked paprika
- Peel the skin off of 2 garlic cloves and add them to the baking tray
- Bake at 180C for 45 minutes
- Served with quinoa, salad leaves and hummus!
