One-pot fried rice

A quick and easy recipe from our student Prishita 🍚

A simple dish that can be paired with so many ingredients for different dishes throughout the week! 

INGREDIENTS

  • Rice, cooked (how to cook the perfect rice
  • 2 eggs
  • A bundle of vegetables of your choice - I like broccoli, carrots and sweetcorn, finely chopped
  • 2 large cloves of garlic, minced
  • Red chilli powder (adjust to your spice level)
  • Tomato ketchup
  • Soy sauce
  • Green onions
  • Cilantro

METHOD

  1. Start by heating up some oil in a frying pan. 
  2. Add in your garlic and red chilli powder and cook until fragrant. 
  3. Add all of your veggies and cook until soft, then move them to one side of the pan. 
  4. Crack your eggs into the empty side of the pan and scramble. Find out how to scramble your eggs here
  5. Once scrambled, mix your eggs and veggies together. Add your cooked rice and mix thoroughly. 
  6. Add in tomato ketchup and soy sauce - as much or as little as you like. Toss everything together. 
  7. Garnish with cilantro and/or chopped green onions. 

Make sure you serve hot 🥵
