One-pot fried rice

A quick and easy recipe from our student Prishita 🍚
A simple dish that can be paired with so many ingredients for different dishes throughout the week!
INGREDIENTS
- Rice, cooked (how to cook the perfect rice)
- 2 eggs
- A bundle of vegetables of your choice - I like broccoli, carrots and sweetcorn, finely chopped
- 2 large cloves of garlic, minced
- Red chilli powder (adjust to your spice level)
- Tomato ketchup
- Soy sauce
- Green onions
- Cilantro
METHOD
- Start by heating up some oil in a frying pan.
- Add in your garlic and red chilli powder and cook until fragrant.
- Add all of your veggies and cook until soft, then move them to one side of the pan.
- Crack your eggs into the empty side of the pan and scramble. Find out how to scramble your eggs here.
- Once scrambled, mix your eggs and veggies together. Add your cooked rice and mix thoroughly.
- Add in tomato ketchup and soy sauce - as much or as little as you like. Toss everything together.
- Garnish with cilantro and/or chopped green onions.
Make sure you serve hot 🥵
