Pastry Chef Sharon's recipe

Try your hand at baking with these simple yet delicious sugar cookies by following Sharon's recipe - our very own Pastry Chef based at London College of Fashion, East Bank! 

INGREDIENTS

  • 227g unsalted butter - softened
  • 200g granulated sugar
  • 375g plain flour
  • 1 egg
  • 1 tsp baking powder
  • 1/4 tsp salt

METHOD

  1. Beat softened butter and sugar for 2-3 minutes till light and creamy. 
  2. Add the egg and vanilla and beat for another minute. 
  3. Sift the flour and baking powder together in a separate bowl. 
  4. Add the flour slowly to the mixture and blend until all of the flour is mixed in, the mixture will form into a soft dough. 
  5. Lightly flour a board, take half of the mixture and use your hands to softly form into a smooth ball. Roll out to your desired thickness - about 1/4 inch or less for a more crispy cookie. 
  6. Cut into shapes and place on a lined baking tray. 
  7. Place in a preheated oven of 175ºC or 155ºF fan oven and bake for 9–11 minutes. The cookies are baked when the edges are lightly golden and pale in the centre. 
  8. Remove from the oven and cool down in the fridge before icing.
