Oven baked nachos with guacamole

Our chefs share their easy step-by-step recipe. This traditional Mexican snack is made with a very few ingredients, low in calories and is perfect for a guilt-free break at home. 

Serves: 1-2

INGREDIENTS

Corn tortillas

  • 50g fine yellow cornflour/maize
  • 75ml warm water
  • Pinch of salt

Guacamole

  • 1 ripe ready-to-eat avocado
  • Half a lemon
  • Half a tomato
  • Handful of coriander
  • Pinch of salt and black pepper

METHOD

Corn tortillas

  1. Put cornflour, water and salt in a bowl and mix until you reach a smooth dough.
  2. Divide the dough in small balls of 30g each and place one in the middle of the chopping board (previously wrapped in cling film) and press with a flat surface firmly (use a saucepan)
  3. Gently peel off the dough and cook on a pre-heated non-stick frying pan for 1 minute each side.
  4. Dispose the warm tortilla on a chopping board and cut it in fancy triangle shape as you like.
  5. Bake them in a pre-heated oven at 200C for 5-6 minutes (look for a golden colour)

Guacamole

  1. Cut 1 avocado in half and remove the skin with a spoon.
  2. Chop the coriander and tomato and add to the bowl with salt, black pepper and a squeeze of fresh lemon (half) 
  3. Mash all with a fork until you reach a creamy texture.
