One-pot Mexican-style chicken & rice

Quick, easy and eco-friendly

Save time, energy and washing up with this super simple one-pot recipe that is perfect for meal prep or for your flat to enjoy after a long day at uni. 

Serves: 4

INGREDIENTS

  • 480g chicken breast
  • 200g white rice (uncooked and washed)
  • 1 tin black beans
  • 1 tin chopped tomatoes
  • 200g tinned/frozen sweetcorn
  • 2 chicken stock cubes
  • 1 large red onion
  • 1 red bell pepper
  • Mushrooms
  • 80g cheese (grated)
  • 2 limes
  • 2-4 garlic gloves
  • Fresh coriander

METHOD

  1. Season your chicken breast with your preferred seasonings (salt, pepper, paprika, garlic powder, cumin, mixed herbs) and coat well. Cook in the pan, remove and leave to one side. 
  2. Deglaze pan with water and cook your onions and peppers. Once softened, add in mushrooms and garlic. 
  3. Once cooked, add in drained black beans and sweetcorn. Then add the cooked chicken, chopped tomatoes, rice, chicken stock, salt and freshly squeezed lime juice. 
  4. Leave to simmer for 10-15 minutes with a lid on and stir halfway through. 
  5. Once the rice is cooked and sauce has thickened, top with grated cheese and coriander. Place the lid back on to let the cheese melt and serve.
