Chocolate Easter nests and eggs

A fun take on the traditional Easter egg

This Easter get your friends and flatmates together to make some delicious themed vegan treats that everyone can enjoy. 

INGREDIENTS

For the nests:

  • 200g dark chocolate chips (vegan)
  • 90g Nestle Shredded Wheat

For the Easter eggs:

  • 65g whole cashew nuts
  • 65g pitted dates
  • 18g soft brown sugar
  • Cocoa powder
  • Ground cinnamon
  • A drop of vanilla extract/essence

METHOD

To make the nests 🪺

  1. Melt the chocolate chips in a heat-proof glass bowl over a pan of simmering water.
  2. Remove from the heat and break in the Shredded Wheat. Stir together to combine. 
  3. Spoon into a 10-12 silicone muffin trays to save on waste. Create a nest shape using a spoon to make a well in the middle and higher edges. 
  4. Chill in the fridge for an hour or two until they have set.

To make the Easter eggs 🥚 

  1. Blend together the Easter egg ingredients until the mixture comes together, and store in the freezer for 15 minutes to set. 
  2. Remove the mixture from the freezer and to create each egg, take half a tbsp of the mixture and shape into an egg. To make this easier, keep a bowl of water nearby to keep your hands wet to stop the mixture from sticking to them. Start by rolling the mixture into a ball and make the base and tip come to a point in an egg shape. 
  3. Set all eggs in the freezer again for around 15 minutes. 
  4. When the eggs are set, roll them in cocoa powder to finish them off.

When the nests and eggs are all ready, arrange them by adding 1-2 eggs to each nest. Store in the fridge and enjoy!
