Ingredient spotlight: not-so-basic bread

Holding most of your meals together 🥪

We have partnered with Wildfarmed in our canteens for all of your cravings, but you can experiment with this single ingredient in the comfort of your own home too.

To help raise some ideas, we've put together some creative bread recipes we think you'll loaf that'll cover every meal of the day!

Breakfast: French toast 

Only taking 5 minutes to prep and 15 minutes to cook, this is a great choice for a quick brekkie before uni (and you can customise it every day!). 

INGREDIENTS

  • 2 large eggs
  • 1/2 cup milk
  • 1 dash salt
  • 1 tsp sugar (optional)
  • 1 tbsp butter, for the pan
  • 4-6 slices bread, preferably stale or day-old
  • Your favourite toppings

METHOD

  1. Break the eggs into a wide bowl or dish and beat them lightly with a fork or whisk. 
  2. Add the milk, sugar and salt and stir. 
  3. Coat a frying pan with a thin layer of butter on medium-low heat. 
  4. Place the slices of bread, one at a time, into the egg mixture, coating both sides. Leave to soak the egg mixture for a few seconds.
  5. Add your eggy bread into the pan and heat slowly for a few minutes on both sides. Remove from the pan when they're golden brown. 
  6. Serve with your favourite toppings such as fruit, butter, syrup, sugar etc.

Lunch: Sausage roll with a twist

Easy to make and eat on the go, try out this DIY sausage roll that does in fact involve sausages, and rolling. 

INGREDIENTS

  • 4 slices of bread
  • 2 large eggs
  • 4 pre-cooked tinned hot dog sausages (or cook your own)
  • Cheese slices (optional)
  • Breadcrumbs
  • Oil

METHOD

  1. Flatten your bread with a rolling pin (if you don't have one you can also use an empty bottle or can). 
  2. Crack your eggs into a bowl and mix. 
  3. Roll each slice of bread around a sausage and use the egg to stick the bread together by coating the last edge and pressing down to stick. If you want to add cheese, simply place the cheese slice onto the bread before you start rolling.
  4. Once all are rolled, coat entirely with the egg mixture before rolling in breadcrumbs. 
  5. Deep fry until golden and crispy and drizzle with your favourite sauces. 

Dinner: Cheesy garlic bread bites

These are a great accompaniment to so many meals, from pasta dishes to a hearty chilli con carne. Try your hand at making your own bread - it's easier than you think!

INGREDIENTS

For the dough

  • 350g bread flour
  • 15g sugar
  • 15g milk powder (optional)
  • 7g instant dry yeast
  • 7g salt
  • 200g whole milk (at room temp)
  • 1 large egg
  • 60g unsalted butter, softened and cubed

For the filling

  • 200g shredded mozzarella (you can also use string cheese, cubed)

For the garlic butter

  • 60g butter
  • 2 large cloves garlic, minced
  • 1-2 tbsp fresh parsley, chopped
  • Pinch of salt

METHOD

1. Prepare the dough

  1. Add all ingredients except butter into your mixing bowl. Knead on low speed for 10 minutes in a stand mixer or knead with hands until a smooth dough is formed.
  2. Slowly add the butter one cube at a time while kneading. Once all butter is added, knead for 10-20 more minutes at low-medium speed.
  3.  Proof for 60-90 minutes until doubled in size.

2. Shape the dough

  1. Once doubled in size, divide the dough into 20 pieces and roll into balls.
  2.  Flatten each dough ball and add cheese to the centre. Wrap dough around the cheese and pinch to seal. 
  3. Arrange bread bites in a baking pan, seam-side down. Cover and proof for 30 minutes until puffy. 

3. Bake:

  1. Preheat oven to 180ºC.
  2. Brush bread with egg wash. Bake for 15-20 minutes. Meanwhile, prepare your garlic butter. 

4. Make the garlic butter:

  1. Add butter and garlic to a pot and heat until butter is melted. Simmer for 1 minute. 
  2. Add herbs and salt to taste then remove from heat.
  3. Brush garlic butter over the bread bites as soon as they come out of the oven.

Dessert: Cinnamon sugar rolls

Whether you want a sweet snack after dinner or are planning a brunch dish, this recipe is super simple and low-effort. 

INGREDIENTS

  • 3 pieces of soft bread
  • 2 tsp cinnamon
  • 4 tbsp caster sugar
  • 4 tbsp butter
  • 2 tbsp milk
  • 1 egg
  • 1 tsp icing sugar
  • 1 tbsp golden/maple syrup

METHOD

  1. Use a rolling pin or bottle to flatten the bread slices.
  2. In a bowl, add your butter, sugar and cinnamon. Heat in the microwave for 15 seconds then mix well to form a paste. 
  3. Spread the butter paste on one side of each bread slice. Roll each slice tightly with the cinnamon paste on the inside of the roll. Then cut the rolls in half. 
  4. Beat the egg on a plate with the milk. Add the rolls and cover in the egg mixture. 
  5. Add 1 tbsp butter to a frying pan. When bubbles appear, add the rolls and fry on medium heat until golden, turning regularly. 
  6. On a plate, mix 2 tbsp sugar with 1 tsp cinnamon. Coat the fried rolls in the sugar and serve with icing sugar on top and a drizzle of syrup.
