Cheddar and sunflower seed soda bread

How to make one loaf

Baking bread from scratch can be a wholesome activity and is sure to impress your friends, family and flatmates! Here is how you can make your own:

INGREDIENTS

  • 250g white bread flour (we use Wildfarmed flour in our canteens) 
  • 5g salt
  • 7g bicarbonate of soda
  • 250g buttermilk or soya yoghurt
  • 75g grated cheddar
  • 60g sunflower seeds

METHOD

  1. Place a generous handful of white flour on the table, ready to coat the sticky dough when your finished mixing it.
  2. Into a large bowl weigh the flour, salt and bicarbonate all together, and rub well together. 
  3. Add the sunflower seeds and mix well again.
  4. Add the grated cheddar and gently roll them around the flour to ensure they are separate and evenly coated, but not crumbled. 
  5. Add the buttermilk and bring together gently by folding through, like making a scone.
  6. Scoop out the mix and place into the flour, get all mix out of the bowl and add.
  7. Roll the dough in the flour to coat but not to incorporate. 
  8. Cut 4 sections into the loaf, careful not to cut all the way through. Slide into a hot oven at 180ºC for 30 minutes – the core temperature of any loaf needs to be between 94-96ºC. 

Leave it to cool and it's ready to slice! 🍞
