Our favourite overnight oats recipes

You oat to try out these mouth-watering breakfast recipes this year! 

Simple, cheap and delicious, kickstart heading back to university by meal prepping these overnight oats for the week. All you need is a jar, bowl and a spoon to get started. 

For the fruit fanatics...

Frozen berries 🍓

INGREDIENTS

  • 1 cup rolled oats
  • 1 cup oat milk
  • 1/2 cup vanilla yoghurt
  • 1/2 cup frozen berries

METHOD

  1. Add all the ingredients into a jar.
  2. Mix well.
  3. Top with your favourite nuts or granola. 
  4. Leave in the fridge overnight and enjoy in the morning. 

Banana and cinnamon 🍌

INGREDIENTS

  • 40g oats
  • 1/2 banana
  • Pinch of cinnamon
  • 1 tsp maple syrup or honey
  • 100ml water
  • 100g high protein yoghurt
  • 1/2 tsp sweetener

METHOD

  1. Mix the oats, water, banana, cinnamon and maple syrup/honey in a jar or ramekin until combined.
  2. Microwave for 1 minute 30 seconds.
  3. Mix the sweetener and yoghurt. Spread over the oat layer.
  4. Leave in the fridge for 2 hours or overnight.
  5. Top with banana slices and a sprinkle of cinnamon. 

If you have a sweet tooth...

Biscoff 🍪

INGREDIENTS

  • 1/3 cup oats
  • 1/3 cup (oat) milk
  • 2 tbsp greek yoghurt
  • 2 tbsp melted Biscoff
  • 1 Biscoff cookie (crumbled) 

METHOD

  1. Add the oats, milk and greek yoghurt into a jar. Mix well.
  2. Microwave the Biscoff spread on low for 10-20 seconds until melted. Layer it over the oat mixture until covered.
  3. Top with crumbled Biscoff cookie. 
  4. Leave in fridge overnight. 

Lemon cheesecake 🍰

INGREDIENTS

For the base:

  • 1/4 cup vanilla yoghurt (60g)
  • 2 tbsp light cream cheese (40g)
  • 2 tbsp maple syrup
  • 1 tbsp chia seeds (10g)
  • 1 cup instant oats (80-85g)
  • 3/4 cup milk (180-220ml)
  • Lemon zest and juice to taste

For the topping:

  • 25-30g white chocolate
  • 1/3 cup yoghurt (90-100g)
  • 1/2 tbsp sweetener (optional) 

METHOD

  1. Add all of your base ingredients to a bowl and mix well until fully combined.
  2. Add lemon zest and lemon juice to taste. 
  3. For the topping, melt your white chocolate in a microwave-safe bowl. Once melted, add the yoghurt and sweetener. Mix until smooth.
  4. Spread your topping mixture evenly across the oat base.
  5. Garnish with a slice of lemon and coconut shavings.
  6. Leave in the fridge overnight.
