Easter egg rocky road

Use up your leftover Easter eggs with this recipe. 

Too much chocolate this Easter and don't know what to do with it? Make some delicious rocky road! 

INGREDIENTS

  • 2 cups leftover chocolate Easter eggs (crushed)
  • 1 cup mini marshmallows
  • 1/2 cup chopped nuts (e.g. almonds or walnuts)
  • 1/2 cup shredded coconut
  • 1/4 cup butter
  • 1 cup digestive biscuits (crushed)
  • 1 cup milk chocolate chips
  • 1 cup dark chocolate chips

METHOD

  1. In a large bowl, combine the crushed Easter eggs, mini marshmallows, chopped nuts and shredded coconut. Mix well and set aside.
  2. In a small saucepan, melt the butter over low heat. Add the milk and dark chocolate chips, stirring constantly until fully melted and smooth.
  3. Pour the melted chocolate mixture over the Easter egg and marshmallow mixture. Stir until all ingredients are well coated in chocolate.
  4. Add the crushed digestive biscuits to the mixture and fold gently to combine.
  5. Line a 9x9 inch baking dish with parchment paper. Pour the mixture into the dish and press down lightly to flatten and spread evenly.
  6. Place the dish in the fridge and allow the rocky road to set for at least 2 hours, or until firm.
  7. Once set, remove from the fridge and cut into squares. Serve and enjoy!
