Waste Knot: fighting against food waste
We have partnered with Waste Knot to create delicious dishes from rescued surplus fruit and vegetables.
Did you know that over 3 million tonnes of good-to-eat food os wasted across the food industry each year?! That's enough food for an estimated 7 billion meals.
That's why we have partnered with Waste Knot to help reduce food waste, benefit growers and give back to the environment.
What is Waste Knot?
Over 7% of fruit and veg grown in the UK never make it to the plate (more than £1 billion worth of perfect produce going to waste). Waste Knot is a company that rescues surplus fruit and vegetables from farmers' fields and puts them straight into chef's kitchens to create amazing dishes.
The obsession with aesthetically 'perfect' fruit and vegetables seems to be growing, so their aim is to alter people's perceptions of worth produce to stop tonnes of delicious, healthy food from being wasted just for being an unusual shape.

All the farms Waste Knot work with are either Red Tractor or LEAF accredited, so chefs and customers can rest assured that their food is grown responsibly and sustainably. Click here to find out all about how they've created their own process.
Our chefs do a great job incorporating this rescued fruit and veg into our canteen menus and salad bar. Just look at our delicious spicy beetroot and root vegetable soup!
