Easy sweet potato brownie
Suitable for vegan and general healthy whole food diets.
This vegan recipe is easy to make and prepared with just 7 ingredients. It’s full of fibre and loaded with nutrition, moist and fudgy and not too bitter with almonds and sweet potato. Let’s bake!

Serves 16
INGREDIENTS:
- 1kg sweet potatoes
- 240g dates, pitted
- 160g maple syrup
- 200g ground almonds
- 60g coconut oil
- 200g oats
- 160g cocoa powder
METHOD:
- Pre-heat the oven to 170°C.
- Grease and line a 1/2 gastro tray (325×265mm) with parchment paper.
- Leave the potatoes whole, with skin on and bake in the oven for an hour.
- Place the dates in a bowl and pour over boiling water, cover with cling film and leave for 5-10 minutes, then drain.
- Once the potatoes are cooked, allow to cool before removing the skin.
- Finely chop the dates and mix with the flesh of the sweet potatoes.
- Combine the potato mix with the maple syrup, ground almonds, coconut oil, oats and cocoa powder.
- Evenly pour the mixture into the gastro tray and bake for 30 minutes.
- Chill overnight.
- Straighten and trim the edges, then cut into 16 equal portions.
